It is with great pleasure that today we officially launch laquintacove.org.
We invite all of you to participate to laquintacove.org. It is your website!
How? Well, glad you asked!
A.) Subscribe FREE to laquintacove.org – Click here to subscribe now.
It is a simple, “double Opt-In” process designed to provide security to your email.
1. Click wherever you see subscribe here.
2. Enter both your email and the security code that the system will randomly provide you with. (hint: no spaces between letters)
3. Click on Complete Subscription Request.
4. You will then receive an email titled “La Quinta Cove: Activate your Free Email Subscription”
5. In that very email you will see a link. Click on that link to activate your subscription.
You will never receive more than 1 email per day from laquintacove.org’s newsfeed.
B.) Participate in the discussions by posting comments. Simply click on “Comments” at the bottom of each posting. If it shows as “No Comments” it means that no one has commented yet, so feel free to be the first one. Please keep it civil and proper so that everyone can enjoy a frank discussion.

Date Capital of the World

Last month the Date Festival was held and many interesting facts were available about Dates. We live in the Date capital of the world and a delicious recipe follows for this unique and nutritious fruit. The weather is still cool enough for baking so give it a try for family and friends.
Spiced Date Cake with Orange Glaze
1 cup cake flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon salt
1 stick butter – softened
1 cup light brown sugar
2 large eggs
1/2 cup milk
2 cups pitted dates, chopped and tossed with 1 tablespoon flour
Preheat oven to 350 degrees. Grease and flour 9-10 inch nonstick bundt pan. Into a bowl, sift flour, baking powder, spices and salt. Set aside. Cream butter and brown sugar on medium speed. Add eggs one at a time. Add flour mixture in 3 parts, alternating with the milk in 2 parts. Fold in dates. Spoon batter into prepared pan. Bake 25-35 minutes, until golden brown and a toothpick inserted in the center comes out clean. Invert pan, and let cool; loosen with a knife and remove from pan.
Glaze
1/2 pound confectioners’ sugar
zest of 1 orange
3 tablespoons orange juice
2 tablespoons Rum
Drizzle over cooled cake and sprinkle with additional dates if desired.

MYSTERY SOLVED: Air Motion
March 6th, 2008
The art piece titled “Air Motion” by Bruce Thomas that was located at the traffic circle at the rear of Frances Hack Park and in front of Teddy’s was damaged beyond repair during the last “wind event”. The Community Art Purchase Committee is shopping for a replacement piece at the upcoming LQ Arts Festival.
